If you want better coffee at home, the fastest upgrade isn’t a new grinder, a fancy kettle, or some Scandinavian glass contraption that costs $140.
It’s simply leveraging coffee ratios.
The coffee to water ratio controls strength, extraction, balance, and repeatability. Once you understand it, you can brew good coffee on almost anything — drip machine, Chemex, French press, or even the slightly chaotic percolator your uncle refuses to retire.
In this article, I break down the proper coffee to water ratio for every brew method, along with how and why those ratios change across brewing styles.
The golden rule of coffee ratios
Before getting into brew methods, you need the baseline. Some coffee people also call this a brew ratio. It’s expressed as coffee:water.
The standard coffee grounds to water ratio used in specialty coffee is 1:16, which means 1 gram coffee:16 grams water. If you prefer thinking in kitchen terms rather than grams: 1 tablespoon coffee ≈ 8-10 oz water.
So, why 1:16?
The reason is that most coffees extract best when extraction yield lands around 18-22% and the final beverage strength lands around 1.15-1.35% Total Dissolved Solids (TDS). This is a fancy way of saying that most coffee tastes best when you pull the right amount of flavor out of the beans (not too little, not too much).

If you don’t extract enough (too little coffee or too quick of a brew), the coffee tastes weak, sour, or hollow. But if you extract too much (too much coffee or over-brewing), it tastes bitter, harsh, or kind of burnt. That “18-22% extraction” number just means you’ve pulled out a balanced amount of the good stuff from the coffee grounds, and the “1.15-1.35% TDS” part means that your final cup has the right strength. It’s not watery, nor overly heavy.
These numbers come from the Coffee Brewing Control Chart, originally developed through mid-20th century research and later adopted by the Specialty Coffee Association.

Conveniently, a 1:16 ratio tends to land right in the middle of that range for most roast levels and grind sizes.
If you’re trying to brew consistently, weight-based ratios beat volume (the 8-10 oz figure) every time. So when someone asks about the proper coffee to water ratio, 1:16 is the most defensible starting point. From there, we adjust based on brew method and extraction dynamics.

Drip coffee ratio (Automatic coffee makers)
Most people encounter coffee ratios through drip machines, so the drip coffee ratio question comes up constantly.
A good drip coffee proportions range is: 1:16 to 1:17
This slightly lighter ratio works well because automatic brewers typically:
- Use moderate extraction times
- Have uneven saturation patterns
- Often produce slightly higher extraction yields
Typical dosing looks like this:

If you’re using a basic drip machine, start your brew ratio at 1:17 and adjust from there. If you’re using something like the Bonavita 8-Cup (or other SCA-certified brewer), you can start at that ideal 1:16 coffee ratio (and expect it to actually taste balanced).

Tips for Adjusting the Drip Coffee Ratio
If coffee tastes weak, move toward 1:15 ratio. On the flipside, if your drip coffee tastes heavy or bitter, move toward 1:18 brew ratio instead.
Moccamaster coffee ratio
The nice thing about the Moccamaster is that it doesn’t really need babysitting. What’s more, the Moccamaster coffee ratio is straightforward because Technivorm machines already operate near ideal brewing conditions.
They typically hit:
- 195-205°F brew temperature
- 4-6 minute brew cycles
- Proper saturation patterns
Because of that, you don’t need compensatory ratios. Best Moccamaster coffee ratio is 1:16.

In other words, the Moccamaster coffee ratio basically follows the specialty coffee standard.
If your results are off, grind size is the more likely variable (not the ratio). Use a machine like the Baratza Encore to really dial in your grind size.
Pour over coffee ratio

Manual brewing gives you the most control, which means the pour over coffee ratio can move around more.
The typical pour over ratio coffee is 1:15 to 1:17. The wider coffee ratio range for pour-over brewing allows you to manipulate extraction through other elements like pour pattern, flow rate, bloom time, and bed depth.
Another element to consider is roast level (light, medium, dark). Different roast levels give up their flavor differently; for instance, a light roast is harder to extract compared to a dark roast. Light roasts are dense and stubborn, and water has a harder time pulling flavor out of them. So nerdy coffee drinkers will adjust the ratio to compensate, taking a light roast to a 1:15 (more coffee) ratio. You use a little more coffee (stronger ratio) to make sure the cup doesn’t taste sour, thin, or underwhelming.

- Light roast: Brew 1:15

Most people land around 1:16 (it’s certainly our standard) which typically balances sweetness, body, and clarity enough if you don’t want a lot of numbers swirling around your head before coffee in the early morning.

Coffee ratio for Chemex
Chemex brewing changes the equation slightly because of the filter.
Chemex filters are ~30% thicker than standard paper filters, highly effective at removing oils and fines (that’s why there’s so much clarity in the resulting cup), and slower-flowing.

Because they absorb more oils and slow extraction, the coffee ratio Chemex often runs stronger, at 1:15.

French press coffee ratio
French press is full immersion brewing. Instead of water passing through the bed, the grounds remain in contact with water for the entire brew time.
Because of that, the French press coffee ratio usually runs stronger. French press produces higher body, more oils, and higher perceived strength. The best French press coffee ratio is 1:15.

AeroPress coffee ratio
AeroPress is where coffee ratios get a little less rigid. Unlike most brew methods, you’re not always making a full-strength cup—many recipes intentionally brew a concentrate, then dilute it after.
The most common AeroPress approach uses a 1:4 to 1:6 ratio (for example, 20 g coffee to 80-120 g water), which looks intense at first but makes sense once you add water later to bring it closer to a normal drinking strength.

Percolator coffee ratio
Percolators operate differently than most modern brew methods; they repeatedly cycle water through the coffee bed, meaning the same water extracts the grounds multiple times.

Because of this, the percolator coffee ratio should be slightly lighter at 1:17. This slightly lighter water to coffee ratio helps reduce the risk of over-extraction and bitterness.
